4 tablespoons SR Flour

2 tablespoons Suet

a sprinkling of Herb de Provence or mixed herbs

4 ounces / 1/2 cup water

pinch of salt

Mix flour, suet herbs and salt together with a metal spoon

Add water a little at a time and keep stirring until a dough is formed

Flour your hands and form it into a ball on a flat surface.

You will usually need to sprinkle more flour to roll it out.

Take small balls of the dough and shape into balls

Place uncovered on top of stew and cook in the oven about 20 minutes

If you put these on top of a stew on the hob they will cook but they won’t be crisp.

You can use plain / all purpose flour.  Just add half a teaspoon of baking powder

Leave out the salt if your diet requires this

Use a 50:50 mixture of white SR and wholemeal SR flour adding baking powder if not SR

Fresh herbs are even better than dried if you have some handy
