200 g / 2 cups / 8 ounces of Self Raising Flour

4 fluid ounces / 1/2 cup of milk

pinch of salt

Mix flour, and salt together with a metal spoon

Add milk a little at a time and keep stirring until a dough is formed

Flour your hands and form dough into a ball on a flat surface.

You will usually need to sprinkle more flour to roll it out.

Roll out the dough into a square about 1/2 / 1.5 cm  inch thick

Cut into squares and then triangles with a knife as shown in the photograph

Cook on a hot griddle turning so all sides are cooked

Traditionally you would use buttermilk.  This makes a richer bread but it is expensive and you cannot always get it.  If you don’t have a rolling pin, just shape the dough by hand.

A dry frying pan (skillet) is a good substitute for a griddle.  Cast iron is best.

If you don’t have measures or scales it doesn’t matter.  Just guess how much flour you need and add milk very slowly to bind  the dough. I often make this bread while in our towing caravan.  I don’t weigh or measure anything and it turns out fine every time.

Cooking relatively slowly ensures  that the bread is cooked through.

This doesn’t keep well so eat on the day of making.  You can freeze these.

I take them straight out of the freezer and put them in the electric toaster

You can use plain / all purpose flour.  Just add half a teaspoon of baking powder

Leave out the salt if your diet requires this

Use a 50:50 mixture of white SR and wholemeal SR flour adding baking powder if not SR
