3 eggs

Milk

100 g each of grated cheese and finely chopped bacon

Short crust pastry for base

pinch of salt

 

Place cheese and bacon into cooked pastry case

Break eggs into a jug

Add the same volume of milk

Whisk the eggs and milk together until well blended

Pour this mixture into the pastry case

Bake for 30 to 40 minutes in the middle of  a hot oven

Gas 6 / 200C / 400F

Test with a dry skewer to ensure it is cooked

An electric mixer is ideal but you can use a hand-held whisk or a fork.  Just make sure the ingredients are thoroughly mixed..  Most recipes use cream and / or crème fraiche.  Nothing wrong with that but I find using milk produces a good, admittedly less rich, result; Plus, of course, milk is a lot cheaper.

More or less bacon and cheese to taste.

Fan ovens set about 20 centigrade cooler  Test if cooked with a skewer which should come out clean

You can replace the cheese and bacon with thinly sliced vegetables .

Courgettes  (zucchini) tomatoes and sweet peppers are good.
